Oatmeal and raisins cookies

Sharing a cookie recipe that is great as an after-school treat, for breakfast, to take for picnics or with a cup of tea! Be careful, they’ll go fast!

Oatmeal-Raisin-Cookies

For about 15 cookies

  • Butter: 90 g
  • Sugar: 120 g
  • Egg: 1
  • Flour: 100 g
  • Oatmeal: 120 g
  • Baking powder: 1 teaspoon
  • Baking soda: ¼ teaspoon
  • Vanilla extract: 1 teaspoon
  • Dried raisins: 120 g

 

In a large bowl, cream together butter and sugar until smooth. Yes, you should have taken the butter out of the fridge earlier and now your arm really hurts, I know! Or you can use your Kitchenaid and make yourself a cup of tea while is does the work for you…

Beat in the eggs and vanilla until fluffy. Stir together flour, baking soda and baking powder. Mix until everything is well combined.Finally add oatmeal and raisins and stir well.

Form the dough into balls using about 1 tablespoon dough or more for each cookie.

Put them on a bake sheet (leaving enough space between them!)

Bake 8 to 10 minutes in the preheated oven (180°C), or until they are golden brown in the edges. Cool slightly and remove from the sheet to a wire rack. Cool completely.
